Shrimp Penne Pesto….Presto!

Last night I whipped up a Shrimp Penne Pasta dish with Pesto-Alfredo Sauce. This quick and easy dish might just become a staple in my rapidly approaching post-grad diet. The combination of cheap, easy ingredients that create this outrageously delicious dish make it even more of a star in my recipe collection!

Ingredients (Serves 4):
Penne Pasta (about half the box)- can be substituted for whole wheat or gluten free pasta as needed.
Shrimp (1 lb)
Alfredo Sauce  (1 1/2 cups)
Traditional Basil Pesto (1/3 to 1/2 cup depending on taste preference)
Parmesan Cheese (as needed)

Cooking Instructions:
Boil water, add noodles, cook until al dente. In a separate pot boil water and add PEELED shrimp, cook until pink, but don’t over cook! If the water is hot enough it should only take a few minutes to boil your shrimp. In a small sauce pan warm the alfredo sauce and pesto, make sure to mix well. (Just a tip, I like to used Newman’s Own Traditional Alfredo, it has more flavor,etc than some other pre-made sauces.) Place cooked shrimp and penne in a mixing bowl and pour warmed sauce over it, mix and serve, topping servings with Parmesan cheese as desired! BOOM! Shrimp Penne Pesto-Alfredo in about 20 minutes.

This meal is great for when you need something quick easy and filling, much more delicious than my go to PB&J sandwich. Another great option is to swap out the shrimp for another meat or veggie to change it up. Versatile, easy, delicious, and cheap…. all the makings of a staple dish. Enjoy!!!
